  • 4 ounce dry bean thread noodles (saifun or possibly harusame)
  • 6 ounce green-leaf lettuce - (abt 6 c.)
  • 6 c. fat-skimmed chicken broth
  • 2 Tbsp. finely-shredded fresh ginger
  • 1 lb boned skinned hard white-flesh fish (such as halibut)
  • 1/2 c. fresh cilantro leaves rinsed
  • 1/3 c. thinly-sliced green onions including tops Salt to taste Freshly-grnd white pepper to taste

Directions

  1. Put bean threads in a bowl and add in sufficient warm water to cover. Soak till soft to bite, about 10 min.
  2. Meanwhile, rinse and drain lettuce. Stack 3 or possibly 4 leaves, roll up lengthwise, and cut crosswise into 1/4-inch-wide strips. Repeat to cut remaining leaves. Place equal portions of lettuce in wide soup bowls, or possibly all of the lettuce in a 3- to 4-qt tureen.
  3. In a 3- to 4-qt pan over high heat, bring broth and ginger to a boil.
  4. Meanwhile, cut fish across the grain into paper-thin slices. Drain noodles; if you like, snip with scissors into 6- to 8-inch lengths. Mound noodles and fish on lettuce; sprinkle with cilantro and green onions.
  5. To serve, pour boiling broth over fish in bowls or possibly tureen; stir to cook fish proportionately. If fish does not turn opaque, cover bowls or possibly tureen tightly and let stand 2 to 3 min. Add in salt and white pepper to taste.
  6. This recipe yields 4 servings.
  7. Comments: To easily slice fish very thin, freeze the piece till it's hard when pressed, about 30 min, then cut. For drama, bring the boiling broth to the table and ladle it into bowls over the raw fish, lettuce, and noodles - the fish cooks in seconds. Look for wiry bean thread noodles in the international section of well-stocked supermarkets or possibly in Asian markets.
