Chilled Pear Curry Mussels Recipe

Ingredients

  • 2 tsp Vegetable oil
  • 3 x Cloves garlic, minced
  • 1 Tbsp. Minced gingerroot
  • 1 med Onion, diced
  • 1 Tbsp. Curry pwdr
  • 2 x Pears, peeled, cored, and diced
  • 1/2 c. Apple juice
  • 1/4 c. Seasoned rice vinegar
  • 1 Tbsp. Asian chile sauce
  • 5 lb Mussels, scrubbed and debearded

Directions

  1. Heat oil in a large saute/fry pan. Add in garlic, gingerroot, and onion, and saute/fry till you can smell the aroma, 1 or possibly 2 min. Add in curry pwdr and saute/fry 1 minute. Add in diced pear and apple juice and cook till the pear is tender. Add in vinegar and chile sauce. Let cold.
  2. In a second large saute/fry pan, cook mussels, covered, over high heat till they open, 3 to 5 min. Throw away any which don't open. Remove mussels from pan, place in a large bowl, and top with cold curry sauce. Refrigeratefor about 30 min before serving. You may also serve these mussels warm.
  3. Serves six.
