Chile Pepper Brioche Recipe

Ingredients

  • 3 1/2 c. All-purpose flour
  • 1 pkt Active dry yeast
  • 1/2 tsp Grnd dry red chili
  • 1 Tbsp. Lukewarm water
  • 1 1/2 Tbsp. Sugar
  • 1 1/2 tsp Salt
  • 1/2 tsp Freshly grnd black pepper
  • 1/4 c. Red bell pepper, grnd, chopped, roasted & peeled, at room temperature
  • 1/2 lb Unsalted softened butter, cut into small pcs, plus
  • 2 Tbsp. Unsalted softened butter
  • 1/3 c. Chopped, roasted and fresh peeled poblano chilies at room temperature
  • 5 x Large eggs at room temperature
  • 2 Tbsp. Lowfat milk

Directions

  1. In the bowl of an electric mixer with a paddle attachment, combine the flour, sugar, yeast, salt, grnd chili and black pepper; beat well. Mix briefly on low speed. Increase speed to medium and add in water, lowfat milk, poblano chiles and bell pepper; beat well. Add in the Large eggs, one at a time, mixing well after each addition. Change to the dough hook, and knead for three min.
  2. The dough will be very sticky. Add in the butter to the dough, one piece at a time, and continue to knead till dough is smooth and shiny and the butter is completely incorporated, 10-20 min. Transfer the dough to a lightly buttered bowl and flip the dough to coat it proportionately with butter. Cover bowl with plastic wrap and allow dough to rise in a hot place till it has doubled in bulk, about three hrs. Punch down the dough and turn it out onto a lightly floured surface. With heavily floured hands knead for five min. Return to a buttered bowl and flip dough to coat proportionately; cover and refrigeratedough for at least six hour or possibly overnight in the refrigerator. Remove the dough from the refrigerator and shape the cool dough into two small loaves. Place in two buttered 4x9 inch loaf pans, cover with a tea towel, and let rise in a hot place till the dough fills the loaf pans and does not spring back when gently pressed, about one hour. Preheat the oven to 375 degrees. Bake the loaves in the middle of the oven till they are golden brown and sound hollow when tapped, about 30 min. Remove loaves from oven and turn them out onto wire racks to cold.
  3. Makes 2 loaves.
