Chicken With Peppers And Pasta Recipe

Ingredients

  • 2 x Bell pepper, (any kind, I like green) cut into 2cm-1 inch strips, up to 3
  • 1 x Onion diced.
  • 2 Tbsp. Paprika, (you can use some warm dry chilli if desired)
  • 1 x Chicken cut to portions, (for 4-6 servings) Extra virgin olive oil, (or possibly any other kind you use)
  • 1/2 c. Water.
  • 250 gm Pasta you like, (2/3-1 lb.)., up to 400

Directions

  1. I hope we are still on peppers, my beloved vegetable. Here is an easy and tasty recipe which can be made ahead of time, just adding the pasta before the meal.
  2. Saute/fry onion in the extra virgin olive oil. Add in peppers and cook for 5-10 more min.
  3. Add in chicken, sprinkle paprika on top, add in water and simmer until chicken is tender. If it goes dry add in some more water. You should have gravy for the pasta.
  4. Before serving boil pasta according to directions. Take out the chicken to a serving plate, put pasta into the gravy and toss well until covered. You can heat it for a short while if desired. Serve warm.
