Chicken And Spanish Rice Recipe

Ingredients

  • 3 lb Fryer, cut up
  • 1 c. Onions, minced
  • 1 c. Green pepper, minced
  • 2 x Cloves garlic, chopped
  • 3 c. Cooked rice
  • 1 can Tomato sauce, (8 oz)
  • 1/4 c. Dry red wine

Directions

  1. Place chicken pcs in an oblong baking dish, skin side down, with thicker portions to outside of dish. Cover with wax paper. Microwave at medium high
  2. (70%) 10 min. Turn pcs over, keeping thicker portions to outside of dish. Cover with wax paper. Microwave at medium high (70%) till chicken is tender, 12 to 15 min. Remove chicken from dish. Add in onions, peppers and garlic. Cover with wax paper. Microwave at high (100%) till tender, 4 to 5 min. Stir in rice. Combine tomato sauce and wine. Pour over chicken. Microwave at medium high (70%) till heated, 9 to 10 min.
  3. Makes 6 servings.
