Ingredients

  • 8 slc crusty Italian bread
  • 1 pkt Athenos Original Hummus - (7 ounce)
  • 2 x boneless skinless chicken breast halves grilled or possibly broiled, cut into 1/4" slices Tomato slices as needed Fresh basil leaves as needed
  • 1 pkt Athenos Feta Cheese with Basil & Tomato - (8 ounce) thinly sliced Red onion slices as needed Extra virgin olive oil as needed

Directions

  1. Spread 1 side of each bread slice with hummus. Top with chicken slices, tomato, basil leaves, feta cheese, onion and second bread slice.
  2. Brush outsides of sandwiches with oil. Cook sandwiches in skillet on medium heat till lightly browned on both sides.
  3. This recipe yields 4 sandwiches.
  4. Great Substitutes: Try 1 package (6-ounce) Louis Rich Carving Board Grilled Chicken Breast Strips in place of chicken.
