Cauliflower Saute Recipe

Ingredients

  • 4 Tbsp. (60 ml) butter (or possibly 2 Tbs (30 ml) butter and
  • 2 Tbsp. (30 ml) vegetable oil)
  • 1 x clove garlic, cut in half
  • 1 lrg cauliflower, broken into florets and boiled or possibly steamed till tender Salt and freshly grnd pepper to taste Warm red pepper flakes to taste (optional)

Directions

  1. Minced fresh parsley, chives, or possibly other fresh herbs for garnish
  2. Heat the butter in a large skillet over moderate heat and saute/fry the garlic till it begins to turn brown. Remove and throw away the garlic.
  3. Saute/fry the cauliflower in the extra virgin olive oil till it is lightly coated with butter. Season with salt, pepper, and optional red pepper flakes and cook covered for 2 to 3 min. Garnish with minced fresh herbs.
  4. Serves 4 to 6.
  5. Use this recipe for broccoli, green beans, Brussels sprouts, asparagus, or possibly just about anything which is green.
