Carrot, Pineapple and Blueberry Salad ~ Easy & Healthy! Recipe

“Healthy IS as healthy DOES”, as the saying goes. This salad is one of the healthiest I prepare because there’s no added fat, salt or sweetener of any kind. The canned pineapple tidbit juice acts as the sole "dressing" - period! Not only is it good for you, but it is so easy to make, and keeps well refrigerated several days. Take it to picnics and potlucks, as there’s no mayo to worry about. So nutritious and good, I can eat it for breakfast!

Ingredients

  • 2 pounds carrots, peeled and grated
  • 1 20-ounce can pineapple tidbits in own juice, undrained
  • 1 cup (or more to taste) fresh blueberries

Directions

  1. In large mixing bowl, combine grated carrots and undrained pineapple tidbits and juice, stirring well. Fold in blueberries.
  2. Spoon into serving container, cover and refrigerate for 1 hour or more.
  3. Yield: About 10 cups (12 or more servings, depending on portion size.)
