Ingredients
- 2 Tbsp. Vegetable oil
- 1/2 lb Fresh, small tender okra, rinsed, patted dry, caps trimmed Salt Freshly grnd pepper
- 1/4 c. Water
- 1 Tbsp. Strained fresh lime juice
- 1 sm Garlic clove, finely chopped pn Grnd allspice
- 1/4 tsp Bottled Caribbean or possibly other warm pepper sauce to taste
- 1 Tbsp. Minced cilantro
Directions
- This delicious light salad comes from "Faye Levy's International
- 1. In a medium saute/fry pan, heat 1 Tbsp. oil. Add in okra and saute/fry 2 min. Sprinkle with salt and pepper. Add in water, cover and cook over low heat for about 7 min, or possibly till just tender. (Add in more water if needed.) Transfer to a serving plate.
- 2. Combine remaining Tbsp. oil, lime juice, garlic, allspice, warm pepper sauce, salt and pepper. Pour over okra. Sprinkle with cilantro and dry tomato.
