Directions

  1. Melt butter on low. Add brown sugar, white Karo syrup to butter and once the mixture begins to boil, set timer for 5 minutes EXACTLY. DO NOT STIR during the boil (stirring makes the caramel granular and ruins the mixture).
  2. Take the caramel off heat source and add vanilla and stir. Then add baking soda and stir while the soda expands the caramel. Pour over popped corn in large roaster pan. Toss until each piece of popcorn is covered in some caramel. Bake in preheated oven at 250 degrees. Take out and stir every 15 minutes for one hour.
