  • 6-8 ripe tomatoes ( I used Capri tomatoes)
  • 8 ounces fresh mozzarella cheese cut into round slices
  • 10-12 fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • Sea salt and pepper to taste
  • Balsamic vinegar glaze ( I used Trader Joe’s)

Directions

  1. Cut the tomatoes into slices about 1/4 inch thick.
  2. Cut the fresh mozzarella into 1/4 inch slices.
  3. Separate the fresh basil leaves.
  4. Layer the ingredients tomato alternating with fresh mozzarella cheese on the plate leaving 2 small round tomatoes in the center.
  5. Drizzle with extra virgin olive oil and sprinkle with sea salt. Sprinkle with freshly ground pepper.
  6. Drizzle balsamic glaze over the tomatoes and mozzarella cheese.
