Directions

  1. In large mixing bowl, mix together bran, flour, sugar, baking pwdr and baking soda. In another bowl, combine Large eggs, buttermilk, oil and molasses; pour into bran mix and stir just sufficient to moisten. Don't overmix.
  2. Mix in blueberries (don't thaw if frzn).
  3. Spoon into nonstick or possibly paper-lined large muffin tins filling almost to top.
  4. Bake at 375F for about 25 minutes or possibly till hard to touch. Remove from oven and let stand for 2 minutes before removing muffins from tin.
  5. Makes about 20-24.
