Ingredients
- 1 T unsalted butter
- Celery, 1 stalk
- White onion, medium
- Carrot, medium
- 1 T flour
- 2 cups veggie broth
- 3 cups chopped broccoli
- ½ cup of milk
- ½ cup heavy cream
- Mild cheddar cheese, slightly less than a pound
- 1/8 t Nutmeg, optional
- Add liquids; 2 cups veggie broth, stir, then milk/heavy cream mixture

%3C/p%3E%3Cp%3EThis%20recipe%20is%20based%20off%20of%20my%20fantastically%20diminished%20memory,%20a%20conversation%20with%20a%20chef%20and%20a%20quick%20gander%20through%20some%20old%20cookbooks.%20After%20incorporating%20what%20I%20had%20learned%20with%20what%20I%20had%20available%20in%20the%20fridge,%20the%20end%20product%20didn%E2%80%99t%20turn%20out%20that%20bad.%20The%20only%20thing%20I%20would%20have%20done%20differently%20is%20to%20use%20a%20MILD%20cheese%20versus%20the%20aged%20sharp%20cheese%20that%20I%20knew%20I%20shouldn%E2%80%99t%20have%20bought,%20but%20had%20to%20because%20it%20looked%20so%20good.%20I%20included%20the%20change%20in%20the%20recipe.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ECut%20the%20carrots,%20onions%20and%20celery%20into%20thin%20slices.%20Place%20into%20saucepan%20on%20medium%20heat%20with%201%20T%20unsalted%20butter.%20This%20little%20mixture%20is%20going%20to%20be%20the%20base%20of%20the%20soup.%20Most%20people%20call%20this%20mix%20a%20%E2%80%98mirepoix%E2%80%99%20(mare-a-pwah)%20%20but%20technically%20it%20should%20be%20a%20fine/small%20diced%202:1:1%20mixture%20(heavy%20on%20the%20onion)%20before%20you%20can%20%E2%80%98officially%E2%80%99%20use%20that%20word.%20Personally%20I%20just%20like%20to%20say%20the%20word.%20Repeat%20after%20me,%20%E2%80%9Cmirepoix%E2%80%9D.%20%20Pretty%20fun%20huh?%20%20OK,%20back%20to%20cooking.%3C/p%3E%3Cp%3EOnce%20the%20onions%20are%20beginning%20to%20go%20transparent,%20add%20the%20flour.%20You%20are%20doing%20this%20to%20give%20the%20fats%20in%20the%20milk%20and%20cheese%20you%20are%20going%20to%20add%20later%20something%20to%20bind%20to.%20Not%20doing%20this%20can%20lead%20to%20the%20separation%20of%20the%20fats%20from%20the%20milk%20and%20this,%20well,%20ruins%20everything.%20So%20don%E2%80%99t%20do%20it.%20Remember%20the%20flour.%3C/p%3E%3Cp%3EAfter%20the%20flour%20has%20been%20absorbed%20(you%20have%20to%20stir%20it%20around%20a%20bit)%20add%20the%20broccoli%20to%20the%20mix.%20The%20water%20content%20in%20the%20broccoli%20is%20going%20to%20cause%20the%20pan%20to%20sizzle%20and%20steam%20a%20little.%20This%20is%20good.%20You%20want%20to%20use%20that%20released%20vapor%20to%20steam%20the%20broccoli.%20Gently%20stir%20the%20mix%20around%20a%20few%20times%20over%20the%20next%20few%20of%20minutes.%20Taste%20a%20piece%20of%20the%20broccoli%20to%20see%20if%20it%E2%80%99s%20done%20yet.%20Don%E2%80%99t%20be%20afraid,%20it%20will%20not%20be%20too%20hot.%20It%20should%20be%20firm,%20but%20not%20hard%20(also%20known%20as%20%E2%80%98al%20dente%E2%80%99).%20Don%E2%80%99t%20be%20overly%20concerned%20if%20you%20miss%20this%20mark%20since%20everything%20is%20going%20to%20end%20up%20in%20a%20blender%20very%20soon.%20If%20you%20want%20your%20soup%20to%20be%20a%20little%20more%20on%20the%20creamy%20side%20then%20let%20it%20steam%20longer%20but%20NOT%20to%20mushiness.%20Personally,%20I%20like%20a%20bit%20of%20broccoli%20grit%20to%20remind%20me%20of%20what%20I%20am%20eating.%3C/p%3E%3Cp%3EOnce%20your%20optimal%20broccoli%20texture%20has%20been%20achieved,%20add%20the%20broth%20followed%20by%20the%20milk/cream.%20Adding%20the%20broth%20first%20helps%20reduce%20the%20temperature%20of%20the%20pan%20making%20it%20less%20likely%20for%20the%20milk/cream%20to%20scald.%20If%20you%20happen%20to%20scald%20the%20milk%20I%20recommend%20ordering%20a%20pizza%20since%20there%20is%20no%20way%20to%20get%20that%20burnt%20taste%20out%20of%20a%20soup.%20If%20you%20make%20it%20a%20broccoli%20pizza%20it%20will%20almost%20be%20like%20the%20soup,%20but%20not%20really.%20If%20you%20are%20really%20lucky,%20your%20date%20won%E2%80%99t%20notice%20the%20difference.%3C/p%3E%3Cp%3ENow%20comes%20the%20fun%20part%20%E2%80%93%20the%20immersion%20blender.%20If%20you%20only%20have%20a%20real%20blender%20that%E2%80%99s%20OK,%20it%E2%80%99s%20just%20not%20as%20much%20fun.%20Regardless,%20let%20the%20mix%20do%20its%20thing%20for%20a%20minute%20before%20using%20a%20blender%20to%20chop%20the%20lot%20into%20a%20smooth%20greenish%20liquid%20before%20adding%20the%20cheese.%20I%20tried%20to%20grate%20the%20cheese%20but,%20how%20can%20I%20say%20this,%20had%20an%20issue%20with%20the%20grater.%20I%20ended%20up%20chopping%20the%20cheese%20into%20small%20pieces%20with%20a%20knife%20and%20throwing%20away%20the%20grater.%20Anyhow,%20slowly%20add%20the%20cheese%20to%20the%20soup%20while%20stirring%20until%20the%20lumps%20disappeared.%20You%20may%20have%20to%20increase%20the%20heat%20under%20the%20pan%20depending%20on%20the%20temp%20of%20the%20liquid.%20I%20can%20remember%20adding%20nutmeg%20to%20give%20it%20a%20little%20warmth%20and%20added%20flavor,%20but%20it%20could%20have%20just%20been%20my%20college%20palate%20that%20made%20me%20think%20it%20was%20good.%3C/p%3E%3Cp%3EEat%20with%20crusty%20bread%20and%20Enjoy!%3C/p%3E%3Cp%3ESummary:%3C/p%3E%3Cp%3EMirepoix%20with%20butter%3C/p%3E%3Cp%3EAdd%20flour%20when%20onions%20are%20translucent;%20stir%20until%20flour%20is%20absorbed%3C/p%3E
