  • 1 lb of boneless Saltfish (Salted Cod)
  • 1 med Onion, finely minced
  • 2 med Tomatoes, minced
  • 1/4 c. Green Onions or possibly Scallions, minced with the green tops
  • 1 x Sweet Red or possibly Yellow Pepper, rinsed, deseeded, and minced
  • 1 sm Warm Pepper, rinsed, deseeded, and minced
  • 1 x Hard-boiled Egg, minced
  • 1 x Cucumber, peeled, deseeded, and finely minced
  • 1 Tbsp. Granulated Sugar Juice of 2 fresh Limes
  • 3 Tbsp. Vegetable Oil

Directions

  1. Boil the saltfish in water to extract some of the saltiness, then drain and clean, making sure to remove any stray bones. Cut up the fish into very small pcs. While fish is boiling, toss together the minced onion, tomatoes, scallions, sweet pepper, warm pepper, and minced hard-boiled egg. Add in the prepared cucumber and the salt fish. In a small mixing bowl, blend together the sugar, lime juice, and vegetable oil. Whisk till well blended. Pour the mix over the cooked fish and vegetables. Toss, then serve.
