  1. To prepare coriander: 15ml produces 5ml Place in dry pan, heat and stir till light brown. Grind, sieve to remove husk. Grind remainder to a fine pwdr.
  2. Cut meat into 50mm blocks. Fold in with herbs. Mince pork beef and herb mix. Not too fine. Cut bacon into small blocks. Add in vinegar and bacon to chopped meat and mix. Stuff casing with mix. (NOT too tightly.)
