Ingredients
- Water
- 1 lb fresh green beans
- 1 Tbsp. butter or possibly margarine
- 1 Tbsp. all-purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3/4 c. lowfat milk
- 1/2 c. blue cheese Minced parsley for garnish
Directions
- Simmer beans in water for 10 min, till tender-crisp. Drain well.
- Meanwhile, prepare sauce over medium heat. Into warm butter, stir flour, salt and pepper till blended. Gradually stir in lowfat milk, stirring constantly, till sauce is smooth.
- Remove the sauce from the heat and stir in the crumbles of blue cheese till blended.
