Black Beans And Yam And Cashews Recipe

Ingredients

  • 1 x onion minced or possibly sliced several cloves garlic chopped
  • 2 c. yams or possibly sweet potato (2 to 3) peeled and cut into 1" cubes
  • 1 x Scotch bonnet chile pepper or possibly habanero chile stem and seeds removed minced
  • 2 Tbsp. extra virgin olive oil
  • 1/2 c. chicken broth
  • 1 can black beans liquid removed
  • 1/2 tsp dry thyme
  • 1 tsp grnd cumin
  • 1/4 tsp freshly grnd black pepper
  • 1 tsp vinegar I used rice vinegar
  • 1 c. cashews rinsed if salted

Directions

  1. Saute/fry the onions, garlic, yam and chile in the oil for 5 min. Add in the broth, bring to a boil, reduce the heat, cover and simmer till the pumpkin is tender.
  2. Add in the beans, thyme, cumin, black pepper and vinegar. Continue to simmer till the beans are heated through. Stir in the cashews and cook 1 minute longer.
  3. I served this over rice cooked with chicken stock. You might want to providesome yogurt or possibly lowfat sour cream if the stew is too spicy for someone.
