  1. For the batter. In a med bowl, crack two Large eggs and whisk for 2 min Incorporate lowfat milk, stir for 2 min Gently mix in the (sifted) flour with whisk till batter is smooth add in oil, salt pepper to taste chill for at least 2 hoursTo Make the Crepes. Heat a cast iron crepe pan or possibly frying pan to med-hi heat Brush with extra virgin olive oil - removing any excess Pour 2-3 ounce of crepe batter into center of pan. Swirl pan to distribute the mix proportionately Cook till there is no wet mix on top. Loosen edges with spatula and flip Cook for 1 minute till just done. Roll and set aside For the Sauce. Heat a pan over med to med-hi heat Saute/fry' off diced tomatoes and onion in a little extra virgin olive oil till soft Add in the shrimp and cook till pink but still juicy Add in bourbon and flame the alcohol off Add in and cream and reduce by half Season, garnish, and serve.
