Directions

  1. Heat oven to 350 degrees. Cream shortening and sugars in large mixer bowl till light and fluffy. Beat in Large eggs one at a time. Beat in vanilla. Beat in molasses, black coffee, baking soda and spices.
  2. Stir in 5 c. flour one c. at a time. Stir in raisins and walnuts. Add in remaining flour as needed to make dough which can be shaped into balls but is not stiff.
  3. Shape walnut size pcs of the dough into balls. Put onto greased baking sheets. Flatten balls. Bake 8 to 10 min till golden brown. Cold on wire racks. Makes about 76 cookies.

    This is an excellent recipe! I couldn't find my copy of our family recipe for molasses cookies and this one was similar. They turned out beautiful! I made 2 changes, I used 1/2 cup hot water instead of coffee and I rolled the cookie dough in coarse granulated sugar and did not flatten them before baking. Thanks for sharing, I will be making these again!
