  • 1/2 c. minced onion
  • 1/3 c. minced celery
  • 1 tbsp. butter
  • 1 pound grnd beef
  • 1 (1 lb.) can tomatoes
  • 1 (12 ounce.) can whole kernel corn, liquid removed
  • 1 (8 ounce.) can tomato sauce
  • 1 tbsp. chili pwdr
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Brown onion, celery and beef in butter in large skillet. Drain off grease. Stir in tomatoes, corn, tomato sauce, chili pwdr, salt and pepper. Simmer for 10 min, stirring occasionally. Pour into baking dish.
  2. Make topping by mixing together cornmeal, flour, salt, baking pwdr, egg, lowfat milk and vegetable oil. Top casserole with cornmeal mix. Bake in warm oven, 425 degrees, for 15 to 18 min or possibly till topping is done.
