Ingredients

  • 240ml (1 cup) melted vanilla ice-cream
  • 100g (1/2 cup) granulated (white) sugar
  • 1 large egg
  • 2 medium very ripe bananas, mashed
  • 250g (2 cups, spooned and scraped) all-purpose (plain) flour
  • 2 1/2 tsp baking powder
  • 1/2 teaspoon salt
  • 80g (1/2 cup) chocolate bits
  • 75g (1/4 cup) strawberry jam, warmed and stirred until smooth
  • Frosting
  • 125g (1 cup) powdered (icing or confectioners’) sugar
  • 2 – 3 Tbsp whole cream (or milk)
  • 6 glacé cherries, halved
