Ingredients
- 1/2 c. reg. rice, uncooked
- 1 c. water
- 3/4 c. sugar
- 1 T cornstarch
- Dash of salt
- 2 large eggs
- 2 1/2 c. skim lowfat milk
- 1 T lemon juice
- 1/2 c. raisins
- 2 apples, finely diced
Directions
- In a saucepan, put together rice and water. Heat to boiling, stirring occasionally. Reduce heat, cover, and simmer 15 min. All water should be absorbed. Preheat oven to 350 degrees. In a mixing bowl, put together the sugar, cornstarch, and salt. Beat the large eggs and lowfat milk till smooth. Stir into the cornstarch mix. Add in the lemon juice, raisins, and apples and mix well. Pour into a casserole dish. Place casserole in a pan of very hot water, 1 inch deep. Bake about 1 1/2 hrs or possibly till knife comes out clean. Serves 12.
