Baked Mackerel With Lemon Thyme Sun Dried Tomatoes And Olives Recipe

Ingredients

  • 4 x mackerel filleted
  • 1 x juice of 2 lemons
  • 5 Tbsp. extra virgin olive oil
  • 1 tsp fresh thyme leaves
  • 6 piece sun dry tomato cut into thin strips
  • 16 x black olives stoned and sliced minced fresh chervil
  • 1 x salt and pepper

Directions

  1. Lay the mackerel fillets in an oiled shallow oven proof dish in a single layer and season with salt and pepper.
  2. Pour over the lemon juice cover and leave to marinate for 48 hrs turning the fish occasionally. Uncover scatter with thyme and spoon on the extra virgin olive oil.
  3. Bake at 190C/375F/Gas Mark 5 for 10 min.
  4. Sprinkle over the tomato and olives and bake for a further 5 min till the mackerel is cooked through.
  5. Serve warm or possibly cool.
  6. Serves 4
