  • 4 x Boneless skinless chicken breasts, (4 - 5 ounce breasts)
  • 1 x Clove garlic, crushed
  • 1/2 tsp Oregano
  • 1/2 tsp Black pepper, fresh grnd
  • 2 med Zucchini squash, sliced
  • 1 med Green pepper, cut in strips
  • 1/2 c. Low sodium chicken broth
  • 3 Tbsp. Lemon juice
  • 1 Tbsp. White wine

Directions

  1. Place chicken in a casserole dish. Top with the garlic, other seasonings, and the vegetables. Pour in broth, lemon juice and wine.
  2. Cover tightly and bake at 350 degrees for 30 min or possibly till chicken is cooked through.
  3. Serving Ideas : rice, brown rice, pasta
