Baked Corned Beef Sandwiches Recipe

  • 1 can corned beef
  • 3 hard-boiled large eggs, minced fine
  • 1/2 c. minced celery
  • 2 T green pepper, finely minced
  • 2 T onions, finely minced
  • 2 T sweet relish
  • 2 T minced stuffed green olives
  • 1 c. diced Velveeta cheese
  • 1/2 c. Miracle Whip

Directions

  1. Have corned beef at room temperature. Mash corned beef with fork. (Pick out any pcs of gristle if there are any.) Add in all remaining ingredients and mix well. Put on sandwich buns. (Use plain buns or possibly Nickle's onion buns or possibly even rye buns.)Wrap each bun in foil; bake on cookie sheet for 15 to 20 min at 350 degrees. Makes 12 large sandwiches from 1 can of corned beef. These sandwiches can be made up in advance and just popped into oven when ready to serve.
