  • 4 piece chicken thighs Without skin
  • 1 tsp Salt
  • 1/4 tsp Paprika
  • 1/2 tsp Tarragon Fresh grnd pepper
  • 3 Tbsp. Lemon juice
  • 2 tsp Tamari soy sauce
  • 1/4 c. Sherry
  • 2 x Shallots -- diced
  • 1/2 c. Chicken broth
  • 2 tsp Cornstarch
  • 1 c. Yogurt Salt to taste
  • 2 Tbsp. Fresh parsley -- minced

Directions

  1. Arrange chicken pcs in a heavy, shallow pan, lightly oiled. Season= chicken pcs with salt, paprika, and tarragon. (If you like,= freshly-grnd pepper may be used.) Sprinkle lemon juice, soy sauce and= sherry over chicken. Place diced shallots around chicken pcs. Place pan= in preheated 425 F oven. and bake, uncovered, for 20 min. Lower oven= temperature to 375 F; cover pan and contunue to bake for 30 min,= basting occasionally with accumulated liquid. (Remove cover after 30= min baking and continue to bake 15 or possibly 20 min longer, or possibly till= chicken is tender and nicely-browned.) Add in corn starch to yogurt. Put accumulated juiced in pan on top of stove and= bring to a boil. Add in yogurt and stir till thickened. Put on top of chicken= and top with parsley.
