Bacon And Herb Stuffed Mushrooms Recipe

Ingredients

  • 4 lrg flat mushrooms
  • 25 gm butter
  • 1 med onion peeled and minced
  • 1 clv garlic peeled and washed
  • 4 x rashers smoked pack bacon de rinded and diced
  • 75 gm fresh white breadcrumbs
  • 50 gm Cheddar cheese grated
  • 1 Tbsp. freshly minced parsley
  • 1 x salt and freshly grnd black pepper Freshly squeezed juice of 1/2 lemon
  • 75 ml vegetable stock

Directions

  1. Wipe the mushrooms and carefully remove the stalks.
  2. Finely chop the stalks.
  3. Heat the butter in a frying pan add in the onion garlic and minced mushroom stalks and cook together for 3 min.
  4. Add in the bacon to the pan and cook for a further 3 min.
  5. Remove from heat and stir in the breadcrumbs cheese parsley seasoning and lemon juice.
  6. Arrange the mushrooms in a lightly greased ovenproof dish and divide the stuffing between them.
  7. Pour in the stock around the mushrooms to prevent them from drying out.
  8. Cook in a preheated oven at 200 degrees C/ 400 degrees F/Gas Mark 6 for 20 min till golden brown and crispy Serve immediatelyDo not freeze.
