  • 1 1/2 lb salt cod
  • 1/2 c. extra virgin olive oil plus
  • 1 tsp extra virgin olive oil
  • 2 c. thinly-sliced onions
  • 1 Tbsp. minced garlic Salt to taste Freshly-grnd black pepper to taste
  • 2 lb white potatoes sliced 1/4" thick, and cooked till tender
  • 4 x hard-boiled Large eggs
  • 8 x black olives
  • 1 Tbsp. finely-minced fresh parsley leaves

Directions

  1. Soak the cod in cool water to cover for 24 to 36 hrs, changing the water occasionally, drain. Flake the cod into small pcs, removing any bones. Set aside.
  2. In a large saute/fry pan, over medium heat, add in 1/4 c. of the oil. When the oil is warm, add in the onions and the garlic. Season with salt and pepper. Saute/fry till slightly golden brown, about 6 min.
  3. Preheat the oven to 350 degrees. Grease a medium ovenproof casserole dish with 1 tsp. of extra virgin olive oil.
  4. Season the potatoes with salt and pepper. Spread half of the potatoes over the bottom of the prepared dish. Sprinkle half of the salt cod over the potatoes. Place half of the onion mix over the salt cod. Top the onion mix with more salt cod. Place another layer of potatoes over the top of the cod. Drizzle the entire pan with the remaining 1/4 c. of oil. Place in the oven and bake for 30 to 40 min, or possibly till golden brown.
  5. Place on a serving platter. Garnish with the sliced Large eggs, olives, and parsley.
  6. This recipe yields 4 to 6 servings.
