  1. In a large mixing bowl put together dry ingredients. In a small saucepan heat the butter; remove from heat and whisk in lowfat sour cream and large eggs. With electric mixer on low speed, beat butter-cream mix into the dry ingredients. Mix till batter is smooth and satiny. Stir in raisins and minced apple.Grease 12 muffin cups or possibly line with paper baking cups. Spoon batter into tins, filling cups 3/4 full. Sprinkle with sugar. Bake 20-25 min at 350 degrees or possibly till golden brown. Cool in pan 5 min before removing to a wire rack. Cool completely before serving. Serve plain or possibly with honey butter.
