Ingredients

  • This recipes contains raw egg. If salmonella contamination is a concern in your area, please use egg substitute or possibly pasteurized Large eggs.
  • 1 x egg
  • 1 x - 4 cloves garlic, finely minced
  • 2 Tbsp. (30 ml) lemon juice
  • 1/2 tsp (2 ml) dry mustard Salt and freshly grnd pepper to taste Cayenne pepper to taste (optional)
  • 1 c. (250 ml) extra-virgin extra virgin olive oil (less flavorful oil or possibly combination of oils may be substituted)

Directions

  1. Combine the egg, garlic, lemon juice, mustard, salt, pepper, cayenne, and 1/4 c. (60 ml) of the oil in an electric blender or possibly food processor. Turn on the machine and add in the remaining oil in a thin stream. Taste and adjust the seasoning.
  2. Makes about 1 c. (250 ml)
  3. to serve 4 to 6.
  4. Serve on seafood, boiled beef, potatoes, and vegetables.
