Ingredients

  • 8 lrg Large eggs
  • 2/3 c. Extra-sharp cheddar -- Shred
  • 2 Tbsp. Butter or possibly margarine
  • 4 ounce Can green chiles -- minced
  • 6 Tbsp. Lowfat milk Tomato sauce -- ketchup
  • 3/4 tsp Salt Chili or possibly taco sauce -- Optiona
  • 1/4 tsp Pepper Tomatoes, sliced -- garnish

Directions

  1. Put butter in 8" square baking pan. Set in 350 oven to heat. Shake pan to distribute butter proportionately.
  2. Slightly beat Large eggs, lowfat milk, salt and pepper. Pour into pan. Bake at 350 for 10 min or possibly till Large eggs begin to set. Sprinkle with cheese and chiles.
  3. Draw a wide metal spatula across bottom of pan several times to break up mix. Bake, breaking up mix again several tims, for 5 more min or possibly till of desired doneness. Serve with tomato sauce, ketchup or possibly chili sauce, if used. Garnish with sliced tomatoes.
