%20posts.%3C/p%3E%3Cp%3EBesides%20the%20cheesey%20bread,%20corn%20souffle,%20and%20pulled%20pork,%20we%20were%20also%20treated%20to%20smoked%20chicken.%3C/p%3E%3Cp%3E%E2%80%9CBig%20Guy%E2%80%9D%20took%20the%20lead%20with%20the%20chicken.%20%20%20%20He%20prepared%20whole%20chickens%20using%20the%20beer%20can%20method.%20%20%20I%20wish%20we%20had%20been%20sitting%20closer%20and%20I%20apologize%20for%20the%20pictures%20throughout%20this%20series.%3C/p%3E%3Cp%3EBig%20Guy%20getting%20ready%20to%20pull%20apart%20the%20cooked%20chicken.%3C/p%3E%3Cp%3EHe%20French-dressed%20the%20legs%20saying,%20%E2%80%9CDon%E2%80%99t%20laugh.%E2%80%9D%20%20I%20assume%20he%20thought%20it%20was%20a%20bit%20dainty%20for%20BBQers.%20%20%20He%20then%20separated%20the%20skin%20from%20the%20bird%20and%20rubbed%20in%20seasoned%20oil%20(see%20last%20post)%20and%20Head%20Country%20BBQ%20Spice.%20%20%20%20%20%E2%80%9CBig%20Guy%E2%80%9D%20also%20said%20that%20you%20can%20use%20any%20liquid%20for%20beer%20can%20chicken%E2%80%94coke,%20Dr.%20Pepper%20(which%20his%20wife%20loves),%20wine,%20or%20his%20favorite,%20Old%20Style%20beer.%20%20%20%20%20He%20also%20trimmed%20the%20wings%20a%20bit%20and%20tucked%20them%20in.%20%20%20%20Place%20whole%20chicken%20on%20can%20about%20half%20full%20of%20liquid%20and%20sit%20up%20in%20a%20smoker%20at%20210%20degrees%20for%202%201/2%20hours.%20%20%20%20This%20bird%20was%20delicious.%3C/p%3E%3Cp%3E3%20Guys%20Smokin%E2%80%99%20Poultry%20Marinade%3C/p%3E%3Cp%3EThis%20recipe%20finished%205th%20in%201998%20out%20of%20300+%20professional%20BBQ%20teams%20at%20the%20American%20Royal%20Open%20BBQ%20Championship%20in%20KCMO%20(the%20world%E2%80%99s%20largest%20BBQ%20competition).%3C/p%3E%3Cp%3EMix%20all%20ingredients%20in%20a%201-gallon%20size%20zip-lock%20bag%20and%20thoroughly%20mix%20together.%20%20%20%20Add%20poultry%20and%20seal%20bag.%20%20%20Let%20marinate%20for%202%20hours%20at%20room%20temperature,%20turning%20frequently%20(if%20marinating%20overnight,%20store%20in%20refrigerator%20and%20do%20not%20exceed%208%20hours.%20%20%20[I%20am%20always%20fearful%20of%20poisoning%20someone,%20so%20I%20definitely%20marinated%20this%20overnight%20in%20the%20fridge.%20%20%20I%20would%20not%20advocate%20letting%20poultry%20set%20out%20for%20two%20hours.%20%20%20Just%20sayin'.]%3C/p%3E%3Cp%3EThis%20mixture%20makes%20enough%20to%20cover%20approximately%2010-12%20boneless%20breasts%20or%20one%20whole%20bird.%3C/p%3E%3Cp%3ERemove%20and%20drain%20marinade%20from%20poultry.%20%20%20Discard%20liquid.%20%20%20Place%20poultry%20on%20smoker%20and%20smoke%20at%20225%20degrees.%20%20%20Smoke%20for%20approximately%2020-25%20minutes%20per%20pound%20or%20until%20done%20(length%20of%20time%20depends%20on%20temperature,%20level%20of%20in-direct%20heat,%20poundage%20and%20whether%20or%20not%20cut%20is%20boneless).%20%20Avoid%20direct%20heat,%20preference%20is%20a%20lower%20temperature%20(do%20not%20drop%20below%20200-degrees),%20and%20in-direct%20heat%20with%20plenty%20of%20smoke.%20%20Loosely%20wrap%20in%20aluminum%20foil%20when%20skin%20reaches%20desired%20color%20to%20finish%20cooking%20(juices%20will%20be%20clear,%20contain%20no%20blood,%20and%20bones%20will%20pull%20apart%20when%20lightly%20tugged.)%3C/p%3E%3Cp%3EIt%20is%20delicious.%20%20%20This%20was%20the%20best%20chicken%20we%20ever%20made.%20%20%20I%20bought%20the%20cheapest%20store-brand%20onion%20soup%20mix%20and%20mixed%20this%20up.%20%20%20OMG!%3C/p%3E%3Cp%3ENot%20the%20most%20lady-like%20pose.%3C/p%3E%3Cp%3EWe%20also%20used%20a%20super%20cheap%20can%20of%20Miller%20Lite%20beer.%20%20:)%3C/p%3E%3Cp%3ECan%20you%20see%20the%20color%20on%20this%20bird?%20%20%20We%20threw%20a%20few%20hickory%20chips%20in%20the%20last%20thirty%20minutes%20of%20cooking%20on%20our%20rusty%20orange%20retro%20smoker.%3C/p%3E%3Cp%3EWe%20ate%20well%20for%20a%20couple%20of%20days.%20%20%20This%20bird%20was%20so%20good%20that%20I%20devoured%20the%20legs%20and%20I%20don%E2%80%99t%20eat%20chicken%20legs.%20%20:)%20%20%20%20We%20sliced%20the%20rest%20of%20it%20for%20salads,%20wraps,%20and%20one%20leftover%20dinner.%20%20%20%20This%20marinade%20is%20a%20keeper.%3C/p%3E%3Cp%3EA%20Knock-Out%20Rose%3C/p%3E%3Cp%3EAbigail,%20today%20I%20present%20to%20you%20a%20yellow%20Knock-Out%20rose.%20%20%20We%20have%20these%20planted%20at%20each%20end%20of%20our%20%E2%80%9Cvineyard.%E2%80%9D%20%20%20%20They%20smell%20wonderful%20and%20bloom%20all%20summer%20long.%20%20%20%20(Please%20send%20hugs%20and%20kisses%20and%20good%20thoughts%20to%20Abigail%20today.)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
