Ingredients

  • Spiced Hazelnut-Almond Mirliton Cake
  • (Makes one 10-inch round cake)
  • 6 whole eggs
  • 4 egg yolks
  • 2 1/2 cups (240 g) hazelnut flour
  • 1 1/4 cups (120 g) almond flour
  • 3 tablespoons (30 g) cornstarch
  • 1/2 teaspoon (2 g) ground Ceylon cinnamon
  • 1/2 teaspoon (2 g) ground green cardamom
  • 1/2 teaspoon (2 g) ground cloves
  • 1 1/4 cups (250 g) granulated sugar
  • 1 tablespoon (12 g) vanilla bean paste
  • Grated zest of 1 orange
  • Grated zest of 1 lemon
  • Mascarpone Chantilly (recipe follows)
  • Orange supremes or segments (optional)
  • 2/3 cup (150 g) mascarpone
  • 1/2 (120 g) cup heavy cream
  • Heaping 1 tablespoon (15 g) granulated sugar
  • 2 teaspoons cognac
  • 1 tablespoon (20 g) orange marmalade
