- For the dressing --
- 1/2 cup non-fat plain Greek yogurt
- 2 tablespoons minced green onion or chives
- 3 tablespoons crumbled feta cheese
- For the burgers --
- Olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/3 cup old-fashioned oats
- 1/3 cup almonds (sliced or whole, doesn't matter)
- 2 tablespoons cornstarch
- 2 tablespoons fresh sage leaves, chopped
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 15-ounce cans white beans (cannellini or great northern), rinsed and drained
- 1 egg

.%3C/p%3E%3Cp%3EHere's%20how%20the%20SRC%20works:%20each%20month%20I%20am%20assigned%20another%20member's%20blog%20(a%3C/p%3E%3Cp%3Edifferent%20one%20each%20month).%20I%20then%20pick%20any%20recipe%20from%20that%20blogger's%3C/p%3E%3Cp%3Esite,%20make%20it%20and%20write%20about%20it%20here.%20There's%20also%20a%20link%20hop%20at%20the%3C/p%3E%3Cp%3Eend%20of%20the%20post%20so%20that%20I%20(and%20you)%20can%20check%20out%20all%20the%20other%3C/p%3E%3Cp%3Eparticipating%20blogs%20and%20their%20great%20recipes.%3C/p%3E%3Cp%3EI%20was%20a%20little%20nervous%20about%20this%20month's%20assignment,%20as%20I%20knew%20it%20would%20fall%20right%20during%20Detox%20January.%20I%20had%20my%20fingers%20crossed%20that%20I%20would%20be%20assigned%20a%20blog%20with%20at%20least%20a%20couple%20of%20healthy%20recipes%20from%20which%20I%20could%20choose.%3C/p%3E%3Cp%3EI%20hit%20the%20jackpot!%3C/p%3E%3Cp%3EMy%20assigned%20blog%20was%20Cooking%20Whims,%20written%20by%20Megan,%20another%20New%20Englandah%20(yay!).%20Megan%20is%20clearly%20a%20big%20fan%20of%20Cooking%20Light%20recipes,%20as%20am%20I,%20so%20I%20was%20thrilled%20to%20find%20so%20many%20things%20to%20try.%20In%20fact,%20I%20wound%20up%20making%20two%20of%20her%20recipes%20and%20had%20a%20hard%20time%20choosing%20which%20one%20to%20feature%20(really,%20it%20came%20down%20to%20which%20one%20yielded%20a%20better%20photo).%3C/p%3E%3Cp%3EThe%20winner?%20White%20bean%20burgers,%20a%20perfect,%20meatless%20dinner%20option%20for%20Detox%20January.%3C/p%3E%3Cp%3ENot%20all%20bean%20burgers%20are%20created%20equal,%20mind%20you;%20I've%20had%20too%20many%20experiences%20with%20their%20being%20either%20too%20crumbly%20or%20too%20gloppy,%20both%20conditions%20resulting%20in%20a%20burger%20that%20just%20won't%20stay%20together%20on%20a%20bun.%3C/p%3E%3Cp%3EI'm%20happy%20to%20report%20that%20these%20white%20bean%20burgers%20not%20only%20held%20together%20but%20were%20also%20moist%20and%20flavorful.%20I%20modified%20Megan's%20recipe%20(adapted%20from%20Cooking%20Light)%20just%20a%20bit%20to%20accommodate%20what%20I%20had%20on%20hand,%20so%20I've%20presented%20it%20for%20you%20below.%3C/p%3E%3Cp%3EI%20served%20these%20burgers%20on%20store-bought%20whole%20wheat%20buns%20but%20they'd%20be%20wicked%20on%20homemade%20Black%20Friday%20sandwich%20buns.%20And,%20if%20you're%20lucky%20enough%20to%20have%20tomato%20jam%20on%20hand,%20it%20would%20be%20an%20amazingly%20superior%20substitution%20for%20sliced%20tomato.%3C/p%3E%3Cp%3EWhite%20Bean%20Burgers%20(adapted%20from%20Cooking%20Whims)%3C/p%3E%3Cp%3ENote:%20This%20recipe%20yielded%206%20large,%20kaiser-roll-sized%20burgers.%20You%20can%20make%20the%20burgers%20a%20bit%20smaller%20(and%20make%208)%20if%20you're%20using%20smaller%20buns.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EWhisk%20the%20yogurt,%20chives%20and%20feta%20cheese%20in%20a%20small%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3EHeat%20a%20little%20olive%20oil%20in%20a%20skillet%20over%20medium.%20Add%20the%20onion%20and%20garlic%20and%20saute%20until%20the%20garlic%20is%20fragrant%20and%20the%20onion%20is%20beginning%20to%20soften%20(about%202-3%20minutes).%20Place%20the%20onion%20mixture,%20along%20with%20the%20next%20nine%20ingredients%20(the%20oats%20through%20the%20egg),%20in%20a%20food%20processor%20and%20whirl%20until%20smooth.%3C/p%3E%3Cp%3EAdd%20a%20bit%20more%20olive%20oil%20to%20the%20skillet%20and%20re-heat%20it%20over%20medium%20heat.%20Using%20a%201/2-cup%20measure,%20drop%20the%20bean%20mixture%20into%20heaps%20in%20the%20skillet%20(carefully%20use%20a%20spatula%20and%20damp%20hands%20to%20shape%20and%20pat%20them%20into%20rounds.%20Cook%20for%20a%20total%20of%208-10%20minutes,%20turning%20once,%20until%20nicely%20browned.%3C/p%3E%3Cp%3EServe%20the%20burgers%20--%20topped%20with%20the%20dressing%20and%20spinach%20or%20lettuce%20leaves,%20as%20well%20as%20sliced%20tomato%20--%20on%20lightly%20toasted%20buns.%3C/p%3E){kind=link}
