Traditional Mandarin Fried Rice Recipe

Ingredients

  •     Canola oil
  • 3 x Large eggs
  • 2 Tbsp. Chopped garlic
  • 2 Tbsp. Chopped ginger
  • 1 bn Scallions minced, green
  •     and white parts separated
  • 1 x Lapchang (Chinese sausage) diced
  •     (can substitute with 4 strips of cooked bacon)
  • 8 c. Cooked, day-old long-grain rice
  • 3 Tbsp. Thin soy sauce
  • 1/2 tsp Freshly-grnd white pepper
  •     Salt to taste

Directions

  1. It is recommended to use day old rice so which the drier rice can soak up the flavors. In a wok, add in 2 Tbsp. of oil and quickly soft-scramble the Large eggs. Remove the Large eggs.
  2. In the same wok, coat with oil and stir-fry garlic and ginger. Add in white scallions and lapchang. Add in rice and mix thoroughly. Add in soy sauce, white pepper and scrambled Large eggs. Check for seasoning. Serve immediately.
  3. This recipe yields 4 servings.
