Torta Di Farro (Farro Cake) (excerpted from The Basic Art of Italian Cooking: DaVinci Style) Recipe

Ingredients

  • 4 eggs
  • 4 cups (800 g) farro flour
  • 2 cups (400 g) sugar
  • 1 cup (200 g) milk
  • 1 cup (200 g) vin santo
  • 2 tsp (10 g) baking powder

Directions

  1. Break all eggs into a large bowl. Add sugar and beat till foamy and eggs have become a pale yellow. Add the farro flour, a tablespoonful at a time, mixing well after each addition. Add milk and vin santo, a little at a time, mixing well after each addition. Then add baking powder and mix well.
  2. Line an 8” cake pan with parchment paper and pour in the batter. Bake in oven preheated to 350 degrees and bake for 30 minutes or until firm. You can also use a tube pan pan that has been buttered and floured.
  3. Remove from oven when done and cool in pan. Remove from pan when cool and dust with powdered sugar. Serve with vin santo.
