Tomato-Veggie and Feta Salad Recipe

This is a very easy and very refreshing vegetable salad recipe. I enjoy it with feta cheese. Cheese may differ though. Enjoy!

Ingredients

  • 6 red-crisp tomatoes (chopped/sliced)
  • 1 small young cucumber (chopped/sliced)
  • 2 green onions (chopped/rings)
  • 1/4 cup fresh basil leaves (cut into thin strips)
  • 5 leaves lettuce (cut into small pieces) - optional
  • 3 tbsps olive oil
  • 2 tbsps balsamic vinegar
  • 3 tbsps crumbled feta cheese (or more)
  • Iodized salt and freshly ground black pepper to taste

Directions

  1. In a large bowl, toss together the tomatoes, cucumber, lettuce, green onions, basil, olive oil, balsamic vinegar, and feta cheese.
  2. Season with salt and pepper.
  3. *Veggies may vay depends on your choice.
