%20my%20family%20on%20both%20sides%20comes%20from%20Tuscany.%20Over%20the%20years%20I've%20heard%20a%20lot%20of%20stories%20about%20the%20Roman%20version%20of%20MAXIM%20ie:%20the%20Pompeiian%20frescoes%20also%20known%20as%20NSFW%20or%20the%20old%20term%20%22cheesecake%22.%3C/p%3E%3Cp%3EThese%20are%20about%20the%20only%20versions%20I%20could%20find%20%20that%20didn't%20involve%20crazy%20naked%20contortions%20or%20hairdos%20made%20of%20snakes%20.%3C/p%3E%3Cp%3EGood%20call%20to%20cut%20that%20picture%20off%20right%20about...there.%20You%20don't%20want%20to%20know%20what's%20going%20on%20in%20the%20basement.%3C/p%3E%3Cp%3EEven%20though%20I've%20been%20cooking%20Indian%20food%20for%20the%20last%2023%20years,%20I've%20always%20been%20interested%20in%20the%20the%20food%20of%20my%20ancestors.%20When%20I%20say%20ancestors,%20I%20mean%20the%20%22waaaaaaaaaaay%20back%20when%22%20ancestors.%20Back%20to%20the%20days%20of%20Tarquin%20and%20the%20Ancient%20Roman%20Republic.%20I%20found%20that%20the%20ancient%20%20Romans%20traded%20with%20India%20and%20there%20are%20quite%20a%20few%20very%20common%20spice%20link.%20Cinnamon,%20pepper,%20cumin,%20saffron%20and%20asafoetida%20are%20among%20them.%20There%20is%20also%20a%20type%20of%20Indian%20Cheesecake%20that%20uses%20chenna%20cheese,%20a%20close%20cousin%20to%20ricotta%20called%20chenna%20poda.%20Well,%20it%20turns%20out%20that%20a%20recipe%20that%20I'd%20seen%20for%20cheesecake%20that%20goes%20back%20to%20the%20very,%20very,%20oldest%20days%20of%20the%20Roman%20Republic,%20is%20nearly%20identical%20to%20the%20Indian%20recipe.%20It%20was%20kismet!%20%20It's%20also%20extremely%20simple,%20easy%20to%20make,%20and%20if%20time%20traveling%20with%20your%20mouth%20is%20your%20thing,%20it%20takes%20dessert%20baking%20back%20to%20its'%20earliest%20days.%3C/p%3E%3Cp%3EAncient%20Roman%20Cheesecake%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20425%20degrees.%3C/p%3E%3Cp%3EPut%20the%20ricotta%20in%20a%20small%20bowl%20and%20beat%20it%20until%20it's%20smooth%20and%20creamy.%3C/p%3E%3Cp%3EAdd%20the%20well%20beaten%20egg%20to%20the%20ricotta.%3C/p%3E%3Cp%3EAdd%20in%20the%20vanilla%3C/p%3E%3Cp%3EAdd%20the%20ricotta,%20egg%20and%20vanilla%20mixture%20to%20the%20cup%20of%20flour.%3C/p%3E%3Cp%3EChop%20the%20chocolate%20finely.%20%20I%20used%201%20disc%20of%20Chocolate%20Olive%20chocolate%20from%20Cocoa%20Planet.%3C/p%3E%3Cp%3EBlend%20it%20into%20the%20dough.%3C/p%3E%3Cp%3EPut%20the%20dough%20onto%20a%20flour%20work%20space%20and%20knead%20it%20until%20it's%20smooth.%3C/p%3E%3Cp%3EDivide%20it%20into%204%20pieces.%3C/p%3E%3Cp%3EShape%20each%20piece%20into%20a%20round%3C/p%3E%3Cp%3EPlace%20the%20rounds%20onto%20a%20parchment%20covered%20baking%20sheet.%3C/p%3E%3Cp%3EThe%20Romans%20used%20to%20bake%20these%20little%20cakes%20under%20a%20clay%20cover%20or%20dome.%20I%20decided%20to%20use%20my%20clay%20cloche%20for%20the%20topper%20just%20for%20authenticity%20sake.You%20can%20use%20an%20oven-proof%20clay%20pot%20or%20bowl%20or%20if%20you%20don't%20have%20one.%20Just%20put%20them%20straight%20into%20the%20oven.%3C/p%3E%3Cp%3EBake%20them%20for%20between%2030%20to%2040%20minutes%20or%20until%20they're%20firm%20and%20slightly%20golden.%3C/p%3E%3Cp%3EIf%20you%20use%20a%20topper%20for%20them,%20remove%20it%20for%20the%20last%205%20minutes%20of%20baking%20to%20give%20the%20cakes%20some%20color.%3C/p%3E%3Cp%3EHeat%201/3%20of%20a%20cup%20of%20honey%20in%20a%20small%20pot.%3C/p%3E%3Cp%3EWhen%20it's%20warm,%20pour%20it%20into%20a%20baking%20dish,%20and%20place%20the%20just%20out%20of%20the%20oven%20cakes%20in%20it,%20to%20absorb%20the%20honey.%3C/p%3E%3Cp%3ELet%20them%20soak%20for%20at%20least%2030%20minutes,%20flipping%20them%20occasionally%20so%20that%20both%20sides%20are%20coated.%3C/p%3E%3Cp%3EDrizzle%20a%20bit%20of%20honey%20over%20each%20cake.%3C/p%3E%3Cp%3EServe%20them%20up.%3C/p%3E%3Cp%3EThese%20are%20not%20cheesecakes%20as%20we%20normally%20think%20of%20them.%20They're%20not%20overly%20sweet,%20and%20absorb%20the%20flavor%20of%20the%20honey%20they've%20been%20soaked%20in.%20They're%20dense%20yet%20still%20light.%20I%20added%20chocolate%20but%20they%20would%20have%20been%20excellent%20with%20orange%20zest,%20or%20cardamom,%20or%20cinnamon,%20saffron,%20or%20anything%20else%20one%20would%20want%20to%20add.%20This%20a%20recipe%20that's%20wide%20open%20for%20whatever%20tickles%20ones'%20fancy.%20Coming%20up%20next,%20another%20way%20to%20do%20a%20banana,%20and%20I%20mean%20that%20in%20the%20nicest%20possible%20way.%20Follow%20along%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
