Directions

  1. In large saucepan or possibly Dutch oven, combine potato slices and sufficient cool water to cover. Bring to a boil. Cover loosely; cook over med heat for 9 - 13 minutes or possibly till tender.
  2. Meanwhile, heat oil in large nonstick skillet over med-high heat till warm.
  3. Add in onion; cook 2 minutes. Ad apple slices, apple juice, brown sugar, salt and pepper; mix well. Cook 10 - 15 minutes or possibly till mix is reduced to a glaze, stirring occasionally.
  4. Drain potatoes. Add in to skillet; stir gently. Remove from heat; let stand 1 minutes before serving.
  5. Makes 8 (3/4 C) servings
  6. NOTES : This was absolutely wonderful.
