A salad of any summer fruits you like sprinkled with lime juice and mixed with a delicious lime-mint sugar.

Directions

  1. Combine the fruit in a bowl. You can do this in advance and chill until needed.
  2. Make the lime-mint sugar only an hour before needed for the best flavor.
  3. Mix together the sugar, lime zest and mint and set aside until just before serving.
  4. To ensure that the mint leaves retain their color, snip them with scissors instead of with a knife or food processor.
  5. When ready to serve, drizzle the lime juice over the fruit and stir to coat.
  6. Stir in the lime-mint sugar and serve.
