My garden was so great this year, lots of tomatoes, pepper and eggplant. These tomatoes are so great, fresh and tasty. You can make them meatless as well, by using mushrooms instead of ground beef, but we like the ground beef

Directions

  1. Place ground beef in a large bowl, add olive oil, chopped onions, parsley, mint, chopped onions, salt, pepper, and Uncle Ben's rice and blend thoroughly.
  2. Hallow out tomatoes and save the insides by placing them on a sieve allowing them to drain.
  3. Stuff raw tomatoes with the mixture and place in a heavy pan or baking dish.
  4. Blend the inside of the tomatoes in a food processor and add 2 cups water
  5. Pour this mixture over your stuffed tomatoes, making sure that a majority of the tomato is covered, put either the lid or aluminum foil over the top of the tomatoes.. Place in a 375 oven and bake for 1 hour. Take out of the oven and allow to sit for 20 minutes then uncover and serve
