Stuffed Acorn Squash with Ham and Walnuts Total time: 40 minutes Ingredients: 1 small acorn squash, cut in half, seeds removed 2 shallots, roughly chopped 2oz (60gr) mushrooms, roughly chopped 2 slices prosciutto or other dry-cured ham, chopped 1/3 cup walnuts, broken in half 2 tbs butter 2 tbs maple syrup Instructions: Place squash halves face down on a baking tray and bake in 400F (200C) oven for 25 – 30 minutes. Or microwave for 5 – 7 minutes. Shells will ‘give’ to the touch when they are ready. Remove and turn over. While squash bake heat butter in a skillet over medium heat. Sauté shallots 5 minutes then add ham, mushrooms and walnuts.  Sauté 5 – 10 minutes longer or until everything starts to brown. Remove from heat and add maple…
