  • 175g golden caster sugar (i used fine cane sugar) *1 cup
  • 3 eggs , beaten
  • 140g self-raising flour *7/8 cup
  • 85g ground almonds *scant 3/4 cup
  • pinch ground ginger
  • 2 knobs stem ginger , finely chopped
  • cream or custard, to serve
