Spicy Marinated Shrimp Recipe

Ingredients

  • 2 lb Large shrimp, peeled and deveined
  • 1 Tbsp. Salt
  • 1 x Lemon, cut in half
  • 8 c. Water
  • 3/4 c. White vinegar">wine vinegar or possibly tarragon vinegar
  • 3/4 c. Extra virgin olive oil
  • 1 x Serrano chiles, (more or possibly less, depending on taste), seeds and veins removed, finely chopped Or possibly, up to 2
  • 1 x Dry chile de arbol, crushed, (no seeds)
  • 1/4 c. Fresh cilantro, minced
  • 2 lrg Cloves garlic, chopped or possibly put through a garlic press
  • 2 Tbsp. Fresh cilantro, minced, (if you like)
  • 3 x Green onions, (white part only), chopped
  •     Freshly grnd black pepper, to taste

Directions

  1. These might be good at a Superbowl party.
  2. Combine the water, salt and lemon halves in a Dutch oven, and bring to a boil. Add in the shrimp, stir, and boil gently for 4-5 min. Remove from heat and drain.
  3. Combine the vinegar, extra virgin olive oil, chiles, cilantro and garlic in a large zip-top plastic bag or possibly other plastic container. Add in the boiled shrimp, and chill for 12 hrs or possibly overnight, turning several times.
  4. To serve, drain liquid from shrimp. In a large bowl, combine chilled shrimp with additional cilantro, green onions and black pepper, and toss well.
  5. Arrange in a serving dish, and serve immediately.
