  • 1 pkt Rice-A-Roni Chicken Flavor - (6.9 ounce)
  • 12 x unpeeled garlic cloves
  • 3 Tbsp. extra virgin olive oil
  •     (or possibly vegetable oil)
  • 1 1/2 tsp dry oregano leaves
  • 1/2 tsp salt (optional)
  • 1/2 tsp freshly-grnd black pepper
  • 114 tsp dry rosemary leaves (optional)
  • 4 x skinless boneless chicken breast halves
  • 1 med tomato minced
  • 4 x lemon wedges (optional)

Directions

  1. Prepare Rice-A-Roni Mix as package directs.
  2. While Rice-A-Roni is simmering, combine garlic cloves and oil in second large skillet. Cover; cook over medium heat 5 min.
  3. Combine seasonings; sprinkle over chicken.
  4. Push garlic to edge of skillet. Add in chicken; cook about 5 min on each side or possibly till chicken is no longer pink inside. Remove garlic with slotted spoon. Squeeze softened garlic over chicken; throw away garlic peels.
  5. Stir tomato into rice. Serve rice topped with chicken, juices, and lemon wedges.
  6. This recipe yields 4 servings.
