Ingredients
- 15 – 20 shallots, sliced, caramelized, about 3/4 cup
- 1 tbs olive oil
- 1 tbs butter
- 1 pizza crust
- 4oz (120gr) sausages, cut into 1/3″ (1cm) slices
- 5 – 6 Roma tomatoes, very thinly sliced
- 1/3 cup sliced green olives
- 4oz (120gr) mozzarella (for pizza, not fresh)
- handful of fresh oregano leaves

%20and%20the%20rest%20on%20this%20pizza.%3C/p%3E%3Cp%3EI%20made%20a%20switch%20for%20the%20crust.%20I%20usually%20use%20puff%20pastry,%20but%20decided%20to%20try%20the%20pizza%20crust.%20Even%20thought%20the%20package%20was%20the%20same%20size%20as%20the%20puff%20pastry%20package%20the%20crust%20inside%20was%20quite%20small.%20I%20managed%20to%20stretch%20it%20to%20fit%20my%20pizza%20pan%20and%20we%20were%20quite%20pleased%20with%20it.%20It%20was%20a%20thin%20crust,%20much%20like%20we%20would%20get%20at%20a%20pizza%20restaurant%20here.%3C/p%3E%3Cp%3EThe%20caramelized%20shallots%20on%20the%20pizza%20were%20wonderful%E2%80%A6.%20even%20if%20a%20bit%20time-consuming.%3C/p%3E%3Cp%3ESausage%20Pizza%20with%20Caramelized%20Shallots%3C/p%3E%3Cp%3ETotal%20time:%201%20hour%2030%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3ECaramelize%20the%20shallots:%20Heat%20butter%20and%20oil%20over%20medium%20heat%20in%20a%20skillet.%3C/p%3E%3Cp%3EAdd%20shallots%20and%20cook,%20stirring%20every%20few%20minutes,%20until%20they%20are%20tender%20and%20turning%20translucent.%3C/p%3E%3Cp%3EReduce%20heat%20to%20low%20and%20cook%20for%2040%20%E2%80%93%2060%20minutes%20longer,%20stirring%20occasionally,%20until%20a%20rich,%20brown%20color.%3C/p%3E%3Cp%3ERemove%20from%20heat.%3C/p%3E%3Cp%3EFry%20the%20sausage%20pieces%20for%202%20%E2%80%93%203%20minutes%20to%20partially%20cook%20and%20release%20some%20of%20the%20fat.%3C/p%3E%3Cp%3ELay%20the%20pizza%20crust%20out%20on%20a%20baking%20sheet,%20stretching%20to%20fit%20if%20needed.%3C/p%3E%3Cp%3EArrange%20the%20tomato%20slices%20on%20the%20crust%20as%20close%20as%20possible%20without%20overlapping.%3C/p%3E%3Cp%3ESpread%20the%20caramelized%20shallots%20evenly%20over%20the%20tomatoes.%3C/p%3E%3Cp%3ETop%20with%20sausage%20pieces,%20olives%20and%20oregano%20leaves.%3C/p%3E%3Cp%3ESprinkle%20with%20cheese.%3C/p%3E%3Cp%3EBake%20in%20a%20preheated%20oven,%20400F%20(200C)%20for%2018%20minutes,%20(or%20whatever%20your%20crust%20package%20tells%20you)%20until%20crust%20and%20top%20are%20golden%20brown.%3C/p%3E%3Cp%3ERemove,%20slice%20and%20serve.%3C/p%3E%3Cp%3EIt%20was%20a%20lovely%20day%20today.%3C/p%3E%3Cp%3EI%20decided%20to%20take%20my%20camera%20when%20the%20girls%20and%20I%20went%20for%20our%20walk.%3C/p%3E%3Cp%3EOur%20early%20morning%20walk%20is%20still%20on%20leashes%E2%80%A6.%20Too%20many%20bunnies%20and%20I%20want%20to%20get%20back%20for%20my%20coffee.%3C/p%3E%3Cp%3EAt%20noon%20we%20got%20out%20and%20do%20a%20bit%20of%20work%20%E2%80%93%20you%20know,%20the%20sitting%20and%20staying%20and%20heeling%20and%20that%20whole%20bit..After%20we%20finish%20working%20we%20go%20for%20a%20walk%20%E2%80%93%20with%20kibble.%3C/p%3E%3Cp%3EFrolic%20to%20be%20precise.%3C/p%3E%3Cp%3EIt%E2%80%99s%20big%20enough%20that%20they%20can%20see%20it%20when%20I%20throw%20it.%3C/p%3E%3Cp%3EI%20throw%20out%20a%20piece%20for%20each%20of%20them%20and%20they%20search%20until%20they%20find%20it.%3C/p%3E%3Cp%3EKibble%20Toss%E2%80%A6.%20Their%20very%20favorite%20game.%3C/p%3E%3Cp%3EThey%20are%20very%20determined%20to%20find%20it.%20Guapa%20is%20better%20at%20sniffing%20it%20out%20so%20I%20have%20to%20throw%20in%20different%20directions.%3C/p%3E%3Cp%3EAfter%20a%20few%20tosses%20in%20the%20field%20we%20go%20to%20our%20little%20woods.%20Things%20get%20more%20interesting%20here.%20With%20all%20the%20trees%20I%20can%20get%20some%20good%20bounces,%20flipping%20the%20kibble%20all%20over.%3C/p%3E%3Cp%3EApparently,%20hitting%20the%20trees%20also%20releases%20some%20scent%20as%20they%20always%20manage%20to%20sniff%20them%20out.%3C/p%3E%3Cp%3EAfter%20the%20eat%20their%20treat%20they%20come%20back%20to%20me,%20waiting%20for%20the%20next%20toss.%3C/p%3E%3Cp%3EOccasionally,%20Guapa%20becomes%20convinced%20that%20she%20missed%20one%20and%20keeps%20on%20searching.%20I%20have%20to%20wait%20until%20she%E2%80%99s%20not%20watching%20me,%20then%20drop%20one%20so%20she%20can%20find%20it%20and%20we%20can%20go%20home.%3C/p%3E%3Cp%3EAnd%20they%20can%20have%20afternoon%20naps%20%E2%80%93%20also%20an%20important%20part%20of%20the%20doggie%20day.%3C/p%3E%3Cp%3EWe%20do%20another%20Kibble%20Toss%20walk%20before%20their%20dinner.%3C/p%3E%3Cp%3ELife%20is%20good.%3C/p%3E%3Cp%3ELast%20update%20on%20April%2011,%202016%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
