Ingredients

  • 1/4 cup guajillo chile oil (recipe follows)
  • 2 cups cherry tomatoes
  • 4- 5 garlic cloves, pealed and mince 3 of them (optional)
  • Salt
  • fresh cracked pepper
  • 1/2 bunch cilantro leaves, chopped
  • 2 tablespoons sherry vinegar (red wine vinegar is a good substitute)
  • 1 loaf French bread or baguette
  • 6 to 8 oz fresh mozzarella cheese
  • Cilantro leaves for garnish
