Ingredients

  • 8 garlic cloves
  • ¼ cup fresh rosemary leaves
  • ½ teaspoon kosher salt, plus more
  • 2 tablespoons olive oil
  • 1- 4 pound boneless pork loin, butterflied (the easy way is to ask your butcher to do this)
  • 2 cups dry white wine
  • 1 cup white vinegar
  • ¼ cup kosher salt plus more
  • 3 pounds potatoes, peeled and cut into 1” squares or wedges
  • 4 garlic cloves, peeled and smashed with the side of a large, heavy knife
  • 6 small sprigs rosemary
  • ¼ cup dry white wine
  • 2 tablespoons olive oil
  • Freshly ground black pepper
