Rick Stein's Cherry Tomato And Rocket Salad Recipe

Ingredients

  • 450 gm Vine-grown cherry tomatoes
  • 50 gm Wild rocket
  •     Maldon salt and grnd black pepper
  • 3 Tbsp. Good quality extra virgin, (3 to 4)
  •     Extra virgin olive oil

Directions

  1. 1 Quarter the tomatoes and break the stalks off the rocket leaves. Put the tomatoes into a bowl and toss with some salt and pepper.
  2. 2 Add in the rocket leaves and toss again. Pile the salad into the centre of four bowl-shaped plates, drizzle with extra virgin olive oil and serve straight away.
