Ingredients

  • 1 pound pork sausage
  • 8 slices white bread
  • 1 sm. tomato paste
  • 1 1/2 teaspoon dry basil, crushed
  • 8 ounce. Mozzarella cheese, sliced
  • 3 Large eggs, beaten
  • 2 c. lowfat milk
  • 1/2 teaspoon salt

Directions

  1. Cook sausage in skillet, slowly. Break up meat as it cooks, cook thoroughly. Drain well, place 4 slices of bread in bottom of greased 8 x 8 x 2 inch baking dish. Combine tomato paste and basil. Spread over bread in pan. Place half of the cheese slices over this. Spoon all of sausage over cheese.
  2. Place remaining cheese slices over sausage. Top with remaining bread slices, trimming crusts if needed to fit. Combine Large eggs, lowfat milk and salt. Blend well. Pour over bread in pan.
  3. Cover; chill several hrs or possibly overnight. Bake uncovered at 350 degrees for 45 min or possibly till puffed and set. Serves 4.
